Southern Fried Chicken

8 chicken legs

1/2 c flour

1 tsp oregano

1/4 tsp ground thyme, marjoram, or sage

1/4 tsp garlic

1 egg, beaten

Remove skin, rinse chicken, pat dry. Beat one egg in medium. Combine flour and herbs in plastic bag. Dip chicken in egg mixture. Add 1/2 pieces of chicken in flour to coat. Heat 1/4 in frypan. Add chicken, brown on all sides, 15-20 min. Reduce heat to low, cover tightly, Cook 25 min more uncovering pan for last 10 min. Drain on paper towel. Mmmm, nothin like good fried chicken!

Macaroni and Cheese

I was so worried when I learned I couldn't have boxed mac and cheese . . . well homemade is so much better!

8 oz elbow macaroni, uncooked

1/4 c soy free butter

2 1/2 tbs flour

3 cups milk

2 cups cheddar cheese

Cook noodles, drain. Melt butter in skillet and whisk in flour. Slowly stir in milk, stirring constantly, until thickened. Add cheese until melted, stirring constantly, take off heat. Place noodles into buttered casserole dish, pour cheese sauce over top. 

Fettucine Alfredo

 When I first made this, it totally made up for not being able to eat spaghetti or lasagna! So good:

1 cup  fettucine pasta (about 1/2 -3/4 box)

2 tbsp soy free butter

2 tbsp flour

1 cup milk

1/4 garlic powder

1/8 tsp salt

2 tbs fresh parmesan cheese (put in more if desired)

Cook fettucine. Melt butter. Stir flour into butter until you have a nice past. Slowly stir in milk. Cook and stir over medium heat until thickened and bubbly. Stir in garlic and salt and cook one more min. Remove from heat and stir in parmesan cheese. Pour over noodles. So goood! :)

Homemade White Bread

I love this bread recipe, so easy to make!

1/2 cup milk + 1/2 cup water

1 package active dry yeast (make sure it does not have ascorbic acid!)

2 tbsp. veg oil

2 tbs sugar

3 1/4 flour

1 1/2 tsp salt

Heat milk in saucepan just until warm. Pour into mixing bowl. Dissolve yeast into 1/2 cup warm water. Add to  milk. Stir in oil, sugar, salt, and 2 cups of the flour. Beat at low speed with electric mixer 1 minute, and then on high for 2 min. (I don't this however, I just use my hands) Stir in remaining flour until you can't stir anymore. Knead the dough on floured surface (for about 15 min), adding flour if needed to make a slightly stiff dough. Place in greased bowl and cover. Put in a warm area to rise (I turn on the oven to 200, then turn it off before putting it inside). Let rise until double, about 1 hour. Punch dough down. Roll in flour and shape into loaf. Grease a loaf pan and place dough in pan. Cover and let rise in warm area until almost double in size. Heat oven to 375. Place loaf in oven and bake 30-45 min. Remove from pan and place on cooling rack. Enjoy, mmmmm!


Pancakes from Scratch

This recipe is from a book by Debbie G Harmon called Cooking for two, it is amazingly good:

1 cup flour

2 tsp baking powder

1 tbs sugar

1/4 tsp salt

1 egg

2 tbs oil

1 cup milk

100% Maple Syrup

Soy Free Butter

Mix dry ingredients together. Fluff dry ingredients with a wire wisk for a few min. Beat egg, oil, and milk together until well blended. Pour into dry ingredients and stir just until moist. Drop onto hot oiled griddle. Cook until bubbles appear all over and edges are browned. Turn and cook other side. Serve with soy-free butter, and pure maple syrup. Enjoy the yumminess!

Chicken Mexi Salad

Ryan and I loved this recipe, and it takes literally 10 minutes to make:

Romain lettuce

One can Pinto Beans (low sodium) or you can cook your own

1 Chicken Breast

Mild Shredded Cheddar Cheese (about 1 cup)

1 can olives

1 can corn (low sodium)

For friends or family if they wanted added flavor:

Catalina dressing

Diced tomatoes

Tear lettuce (as much as you desire). Top with grilled chicken breast, pinto beans, shredded cheese , corn, and olives. (I usually rinse off anything canned, to reduce sodium content.) Enjoy!

Chicken Noodle Soup

I tried this soup recently . . . it's sooooo good!

2 chicken breasts with ribs, skin removed

1/2 white onion (You discard this after cooked in broth)

8 cups water

1/4 tsp sage, marjoram, and thyme,

1 ribs celery (one whole, other diced)

2-3 carrots sliced

2 cups egg noodles, uncooked

Gently boil chicken in water with onion, 1 whole rib celery, and herbs until tender, about 45-60 minutes. When chicken is tender, strip the meat and discard bones. Pour through strainer to remove any small bones. Discard celery and onion. Bring broth to boil, add diced carrots and celery to broth and boil until almost tender. Add noodles, cook about 10 min until tender. Add diced chicken, Serve with warm, homemade bread, matzo, or low-sodium saltine crackers.
